Avocado on toast has got to be one of my favorite breakfasts because it is versatile, nutritious and of course delicious. Avo on its own is tasty enough but in this post I’m going to show you a few of my variations that take this popular breakfast to the next level.
Avocados are full of vitamins (C, E, K, B – 6) and healthy fatty acids such as omega 3. They are a great source of fat when you’re following a healthy well balanced diet.
What can I make using avocados?
This diverse fruit can be used in various ways:
- Avo on toast
- Guacamole
- Creamy avo puree
- Deep fried avocado
- Avocado soups
- Sushi
- Salads
- Smoothies
And the list goes on…
Here are my mouthwatering variations of avo on toast!
1. Guacamole and Sour Cream on Toast
This one is very simple, all you need is:
- 1 slice of toast (buttered optional)
- Guacamole (store bought or homemade)
- Sour cream (store bought or homemade)
Toast a piece of bread until it is golden brown (smear butter on the toast if you wish). Then generously add the guacamole and be sure to cover every square inch of toast. Finally, add a few dollops of sour cream and finish off with a pinch of salt and pepper to taste.
2. Guacamole with a fried egg on toast
Everyone knows this combo!
- 1 slice of toast
- Smashed avocado or guacamole
- 1 fried egg
This one couldn’t be more simple. Toast a piece of bread until it is golden brown. Smash an avocado and smear it generously over the slice of toast (in this example I also used guacamole because the flavor combination was delicious). Lastly, lay a fried egg on top and finish with a pinch of salt and pepper.
How to fry an egg sunny side up
Pre-heat a pan on high heat. Let it heat up for about 45 seconds to a minute until hot. Add a tablespoon of oil (optional: add a teaspoon of butter for extra flavor). Let the oil heat up for a few seconds.
Crack the egg into the pan and let it settle into its shape. Once the white is cooked about halfway through turn the heat down to medium and place a lid over the pan. The steam built up in the pan will cook the top of the egg, don’t let it cook for too long or you may risk overcooking the yolk. After about 45 seconds to a minute it should be ok to come off the heat. If the yolk still wobbles a little then you are good to go.
Last but not least, my favorite
This last one requires a few more ingredients than the previous two. You can make it at home if you have leftovers of the following:
- BBQ pulled pork
- Pickled red onions
You’ll also need:
- 1 slice of toast
- 1 egg
- Half an avo (sliced)
- Mexican shredded cheese
Start off by toasting the bread and heating up the leftover pulled pork in the microwave. Slice a half an avocado and set aside, then fry the egg. Assemble the open sandwich by laying the slices of avocado onto the bread; be sure to evenly distribute the avocado. Place the pulled pork on top of the avo and sprinkle some shredded Mexican cheese which should melt due to the residual heat of the pulled pork. Lay the egg onto the pulled pork and sprinkle a few pickled red onions onto the egg. Finish with a pinch of salt and pepper to taste.
And there you have it 3 ways you can enjoy avocado on toast for breakfast. These are just a few ideas you can experiment with but playing around with your own combinations at home can be fun and rewarding. Give it a try!
