Pickled Red Onions

12 oz Mason jar
1 Sauce Pan
- 1 large Red Onion thinly sliced
- 1 clove Garlic
- 4 sprigs Fresh thyme
- 1 cup Red wine vinegar
- 1 cup Water
- ½ cup White sugar
- 1 tsp Mustard seeds
- 1 tsp Salt
Place water, sugar, red wine vinegar, salt, garlic (keep whole), thyme and mustard seeds in a medium sauce pan and bring all ingredients to a boil.
While the pickling liquid is heating up, finely slice the red onions and place them into a mason jar.
Once the pickling liquid has reached boiling point, remove from the heat and pour the liquid into the mason jar. Be sure to submerge all of the onions. Keep the lid off and let it cool. Once it has completely cooled then screw on the lid and place it into a refrigerator.
