It’s breakfast time and we’re scrambling to find a way to switch up the traditional eggs and toast routine. Then we noticed we had a batch of potatoes and bam! Just like that we’ve got ourselves a breakfast potatoes recipe. Not only was this quick to throw together, but it gave our breakfast a complete flavor upgrade.
5 minute prep…
Peel the potato and onion then dice them into 1/2 inch cubes. You want to keep your potatoes small (around the size of a die) so you are not stuck cooking them for a long time. Finely chop up the oregano and thyme unless you are using dried herbs.
10 minutes to cook…
Preheat a pan on high heat. Add in the oil and butter. Once the butter has melted, add all the ingredients. Toss the pan or mix the potatoes around with a spatula until they are all coated with the oil/butter. Lower the temperature down to medium and place a lid on the pan. Every two minutes toss the potatoes or stir them around so they can cook evenly.
You can test the doneness by cutting into a piece of potato. If it is soft then it’s ready for the next step.
Remove the lid and let them fry for another 2 minutes while continuously tossing/mixing your breakfast potatoes so they do not burn. Remove from the heat and serve.
Within 15 minutes you’ve got a delicious breakfast addition. These breakfast potatoes go perfectly with scrambled eggs and a cuppa joe.
Breakfast Potatoes

- Frying pan
- Spatula or wooden spoon
Ingredients
- 1 large Potato peeled and cubed
- 1 medium Yellow onion diced into cubes
- ½ tsp Oregano chopped
- ½ tsp Thyme chopped
- 1 tsp Paprika
- ¾ tsp Salt or to taste
- ¼ tsp Pepper or to taste
Instructions
- Peel and cube the potato, dice up the onion and then finely chop up the oregano and thyme if you are using fresh herbs.
- Preheat a frying pan on high heat then add the oil and butter.
- Once the butter has melted add in the potato, onions, thyme, oregano, paprika, salt and pepper. Toss or mix the potatoes until the potatoes are coated in the oil/butter and herbs. Then set the stove to medium heat and place a lid on the frying pan.
- Every 2 minutes toss or mix the potatoes around in order to cook them evenly. Once the potatoes are soft then remove them from the heat.
- Serve for breakfast with some scrambled eggs.
