Breakfast Potatoes

These breakfast potatoes are easy and full of flavor. A tasty addition to any breakfast.

Equipment

  • Frying pan
  • Spatula or wooden spoon

Ingredients

  • 1 large Potato peeled and cubed
  • 1 medium Yellow onion diced into cubes
  • ½ tsp Oregano chopped
  • ½ tsp Thyme chopped
  • 1 tsp Paprika
  • ¾ tsp Salt or to taste
  • ¼ tsp Pepper or to taste

Instructions

  • Peel and cube the potato, dice up the onion and then finely chop up the oregano and thyme if you are using fresh herbs.
  • Preheat a frying pan on high heat then add the oil and butter.
  • Once the butter has melted add in the potato, onions, thyme, oregano, paprika, salt and pepper. Toss or mix the potatoes until the potatoes are coated in the oil/butter and herbs. Then set the stove to medium heat and place a lid on the frying pan.
  • Every 2 minutes toss or mix the potatoes around in order to cook them evenly. Once the potatoes are soft then remove them from the heat.
  • Serve for breakfast with some scrambled eggs.
