Breakfast Potatoes
These breakfast potatoes are easy and full of flavor. A tasty addition to any breakfast.

Frying pan

- 1 large Potato peeled and cubed
- 1 medium Yellow onion diced into cubes
- ½ tsp Oregano chopped
- ½ tsp Thyme chopped
- 1 tsp Paprika
- ¾ tsp Salt or to taste
- ¼ tsp Pepper or to taste
Peel and cube the potato, dice up the onion and then finely chop up the oregano and thyme if you are using fresh herbs.
Preheat a frying pan on high heat then add the oil and butter.
Once the butter has melted add in the potato, onions, thyme, oregano, paprika, salt and pepper. Toss or mix the potatoes until the potatoes are coated in the oil/butter and herbs. Then set the stove to medium heat and place a lid on the frying pan.
Every 2 minutes toss or mix the potatoes around in order to cook them evenly. Once the potatoes are soft then remove them from the heat.
Serve for breakfast with some scrambled eggs.
