Homemade Pico de Gallo
This pico de gallo is extremely simple and versatile. Perfect as a dip or topping on your tacos.

Ingredients

Roma tomatoes
diced

Red onion
diced

Garlic

Fresh cilantro
finely chopped

Freshly squeezed lime juice
approximately 2 limes

Balsamic vinegar

Instructions
Dice up the tomatoes and onions, mince up the garlic and finely chop up the parsley.
Add the tomato, onion, garlic, cilantro, lime juice, balsamic vinegar, salt and pepper to a mixing bowl and mix it well.
Place it in the refrigerator to rest for about 20 minutes then mix it up again and taste. Add more salt and pepper if required.
Store it in a sealed container in the refrigerator.
